1 bunch of spinach
1 tablespoon finely chopped onion
6 tablespoons butter or margarine
1 tablespoon mustard
2 tablespoons freshly squeezed lime juice
salt and pepper to taste
2 hard-boiled eggs, diced

Cook the spinach
Drain and chop it finely
Fry the onion in 1 tablespoon of margarine
Combine the remaining margarine, mustard, lime juice, salt, and pepper
Bring to a simmer
Pour over the spinach
Add half of the diced eggs
Stir gently
Transfer to a baking dish and top with the remaining egg
Bake for 4 portions.
