Season the spinach with salt and pepper
Keep it warm while preparing the cheese sauce
Melt the butter, then whisk in the flour until smooth
Combine the cheese, milk, and melted butter, stirring well
Cook until thickened, constantly stirring
Place the spinach in a shallow baking dish and top with diced tomatoes
Make star-shaped eggs and place them on the tomatoes, then cover with the cheese sauce
Bake in a moderate oven
