Combine the gelatin, water, and juice in a saucepan
Mix in the egg yolks and cook over medium heat, whisking constantly for 10 minutes
Remove from heat
Let cool and refrigerate until slightly thickened
Beat the egg whites into a meringue
Add to the gelatin mixture with the orange or tangerine segments
Pour into an 18 cm diameter mold with a hole in the center, moistened with water, and refrigerate until firm
Dismantle and serve
