For the dough:
1/2 cup whole milk
4 tablespoons unsalted butter or margarine
2 tablespoons water
2-3 cups all-purpose flour
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1 tablet active dry yeast (15g)
1 egg
For the filling:
200g catupiry cheese or ricotta
1 separated egg
3 tablespoons cornstarch
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon grated lemon zest
For the dough:

For the filling:

Grease a large bowl and set aside
Melt butter, milk, and water in a medium saucepan over low heat
Let it cool until lukewarm
Do not let the butter melt
In a large mixing bowl, combine 1 cup all-purpose flour, Parmesan cheese, salt, and yeast
Add the lukewarm mixture and beat with an electric mixer for 2 minutes
Add the egg and 1/2 cup flour and beat for another 2 minutes
Gradually add more flour, kneading by hand until a smooth dough forms
Shape into a rectangle on a floured surface
Place in the prepared bowl, turning to coat evenly
Cover and let rise for 1 hour
Punch down the dough
Cover and let rest for 10 minutes
Grease two baking sheets
Roll out the dough to a 30x22cm rectangle
Cut into 12 squares of 7.5cm
Make diagonal cuts to the center, leaving a central gap without cutting
Place squares on the prepared baking sheets, leaving 2.5cm space between each square
For the filling: beat the cheese with egg yolk, cornstarch, lemon juice, and grated lemon zest
Place 1 tablespoon of filling in each square
Fold four opposite corners to the center and press tightly
Cover and let rise for 30 minutes
Heat the oven to a hot temperature (200°C)
Beat egg whites with a fork
Brush the star shapes with egg whites
Bake for 15-20 minutes or until golden brown
Remove from baking sheets and let cool
Dust with 12.
