A preheat oven to moderate temperature (170°F)
In a skillet, melt 2 tablespoons of butter or margarine
Add the mushrooms or sausage, green onion, parsley, and salt
Fry for a few minutes
If necessary, drain the excess fat
Grease two baking dishes
In one bowl, whisk together the egg whites and yeast until stiff peaks form
In another bowl, whisk together the yolks, flour, salt, and black pepper until thickened and pale yellow in color, about 5 minutes
Fold the egg whites into the yolk mixture, being careful not to deflate
Heat a non-stick skillet over medium-high heat
When hot, add 1/2 cup of the egg mixture and spread it evenly to form a circle about 12 inches across
In the center, place 2 tablespoons of the mushroom filling
Sprinkle with Parmesan cheese
Cover with 4 tablespoons of the egg mixture
Repeat the layering process two more times, ending with a layer of egg mixture on top
Bake in preheated oven for 8 to 10 minutes or until the eggs are set and the bottom is golden brown
Remove from oven and let cool slightly before serving.
