When it starts to boil, add the wheat flour slowly while stirring with a wooden spoon
Do not stop stirring until a ball forms that easily detaches from the bottom of the pan
Transfer to a bowl and let cool
Beat in an electric mixer (with a suitable beater for batter) and add 1 egg at a time
Add the mashed potato, chopped almonds, pears, crystallized fruits, and cinnamon
Mix well
Fry with about 3 cm of oil, adding the prepared dough slowly, and cook until golden brown on both sides
Dust off excess oil using an absorbent paper and then roll in powdered sugar
Serve warm
