3 red onions, chopped into small cubes
2 green peppers, chopped into small cubes
1/2 cup of oil
1/3 cup of butter
6 slightly beaten eggs
2 tablespoons of vinegar
5 cups of cornmeal (800g)
Salt and black pepper to taste
1/2 cup of green pimentos, sliced into thin strips
1 cup of fine green scallions, chopped into thin slivers

Fry the onion and peppers in hot oil for 5 minutes
Add butter and when it melts, add eggs
Mix with a wooden spoon "breaking" the eggs
When they become firm, add vinegar and then cornmeal
Cook while stirring for 5 minutes
Season to taste
Serve warm and top with green pimentos and scallions
Let stand for 30 minutes.
