1/2 pound of desalted codfish, flaked

2 cups breadcrumbs
1 1/2 pounds cooked and mashed potatoes
1/2 cup grated cheese
2 cups tomato sauce
20 green or black olives, pitted
Chopped parsley to taste

Fry the codfish in olive oil
Add the onion and let it caramelize
Sprinkle with chopped parsley and set aside
Mix the breadcrumbs with mashed potatoes and half of the grated cheese
In a greased baking dish, make a layer with the potato mixture
Drizzle with tomato sauce and spread the codfish
Top with olives
Repeat the layers until all ingredients are used, finishing with the remaining grated cheese
Place in a medium oven to gratinate lightly
Serve hot with
white rice.
