Cook the white beans in temperate water with salt, being careful not to overcook them so they don't break apart
Drain the water
Heat the olive oil
Combine the beans and fry until lightly browned
Beat the eggs
Add them by pouring circles of egg mixture onto the beans from outside to inside
Let it brown at the bottom, then slide it onto a plate and flip it over to brown the other side
Carefully remove it from the pan
Fry the Spanish chorizo separately, being careful not to pierce it with a fork first
Place the bean mixture into a dish and arrange the chorizo slices alongside
Serve in 4 portions.
