Salt and pepper to taste

Place the potatoes without their skins and cut into halves in a pot with boiling water and cook for three minutes
Drain and let cool
Grate them coarsely and set aside
Boil the leeks in salted water, drain and chop into small pieces
Set aside
Melt the butter in a large skillet and add the potato, carrot, and chopped leek
Add the grated cheese and season with salt and pepper
Beat the eggs with a fork and pour over the vegetables
Flip the skillet to spread the eggs evenly across the bottom of the skillet and let cook slightly
Use a plate to flip the fritada over and cook for another minute
Remove from the skillet and serve immediately.
