8 medium-sized potatoes, if possible of the same size

3/4 cup chopped prosciutto
1 tablespoon grated cheese

Bake the potatoes with their skins on
Let them cook until they're tender but not falling apart
Peel the potatoes
Remove a little bit of the pulp, leaving the potato hollow
Mix this pulp with the prosciutto, cheese, and egg yolks
Beat the egg whites until snowy white and add to the previous mixture
Stuff the potatoes and place in a hot oven for about 10 minutes or until they're lightly browned
