Cook the black beans with the water in a pressure cooker at high heat until boiling
Reduce the heat and cook for 40 minutes
Remove from heat and let it cool down
Fry the onion and garlic in olive oil until they start to brown
Add the diced tomato and bring to a boil, then reduce heat, cover, and cook for 15 minutes
Transfer this mixture to the pressure cooker with the black beans, reheat, and add the melted cheese
Check the seasoning, mix well, and serve hot.
