For the dough
2 cups of wheat flour for quibe (320g)
8 cups of water (1.9 liters)
4 large onions (600g), cut into quarters
4 cloves of garlic
1/3 cup of whole wheat flour (40g)
1/2 cup of chopped parsley (35g)
1/3 cup of grated horseradish (20g)
1/2 teaspoon of pepper sauce

3 cups of grated carrots (360g)
1/4 cup of chopped pecans (25g)

Prepare the dough: in a large bowl, combine the wheat flour and water
Cover with plastic wrap and refrigerate for about 24 hours
Sieve the mixture through a fine-mesh sieve until it becomes slightly loose and tender. Reserve
In a processor, finely chop the onion with garlic (approximately 1 minute)
Transfer to the bowl with the dough, add the remaining ingredients, and mix well. Reserve
Brush an 18cm x 25cm baking dish with olive oil. Reserve
Preheat the oven to 200°C (hot)
Prepare the filling: in a medium bowl, combine all the ingredients and mix well. Reserve
Place half of the reserved dough in the prepared baking dish and top with the filling
Cover with the remaining dough and press down gently
Cover with aluminum foil
Bake in the preheated oven for about 40 minutes
Remove the foil and bake until lightly golden (about 15 minutes)
Remove from the oven and let cool
Prepare the sauce: in a small bowl, combine all the ingredients and mix well. Reserve
Cut the quibe into pieces of 4cm x 6cm
Place on a serving plate and serve with the sauce immediately
