Butter (for greasing)
For the dough
2 cans of cooked green corn, drained (400 g)
1 small onion (70 g), coarsely chopped
1/2 cup of all-purpose flour (60 g)
2 cups of milk (480 ml)
1/2 cup of grated Parmesan cheese (55 g)
3 eggs
1 tablespoon of active dry yeast
For the filling
2 tablespoons of oil
1 medium onion (100 g), chopped
3 cloves of garlic, minced
400 g of skinless and boneless calabresa sausage, crumbled

Preheat the oven to 200°C (medium)
Grease a baking dish with butter and line it with parchment paper. Reserve
Make the dough: in a blender, blend the cooked green corn, onion, flour, milk, and Parmesan cheese until smooth (about 5 minutes)
Transfer the mixture to a medium saucepan and cook over high heat, stirring constantly, until thickened (about 5 minutes)
Let cool to room temperature
In a mixer bowl, beat the eggs until fluffy (about 7 minutes)
Add them to the corn dough gradually and mix delicately with a spoon until combined
Add yeast and mix slowly
Spread this mixture into the prepared baking dish using a spatula or wooden spoon
Reduce oven temperature to 180°C (medium) and bake until the dough is golden brown (about 30 minutes)
Make the filling: in a medium saucepan, heat oil over high heat
Add onion and garlic and cook until caramelized (about 5 minutes)
Add sausage and cook until heated through (about 10 minutes). Reserve
Remove the dough from the oven and let cool to room temperature
Turn out onto a clean, dry cloth
Remove parchment paper and turn over onto another cloth
Let the dough rest for 5 minutes before filling to help it retain its shape
Unroll, fill with reserved filling, and re-roll
Transfer to a serving dish and serve immediately
