1 Cook the white beans in water and salt until tender, but not mushy
Drain
2 In a pan, heat the olive oil, add the white beans, and fry lightly golden brown
In a bowl, beat the eggs with a manual whisk and season with salt and black pepper
Add the eggs to the beans in circular motions from outside to inside
Let it dower slightly on the bottom
3 Transfer to a plate and flip over to dour the other side
Carefully remove from the pan and place in a baking dish
4 Serve with the linguiça sausages, pierced with a fork, fried in the same pan used for the eggs
Fry until golden brown, then serve alongside the white beans.
