Select the black beans and soak them overnight
Cook in a large pot with enough liquid to cover (about 6 cups)
Add the remaining ingredients and simmer slowly for 2 1/2 hours, or until the black beans are tender
Serve with 6 servings
It is almost certain that you will use a pressure cooker to prepare this dish
If so, follow our suggestion: the black beans will not foam excessively and will not clog the pressure cooker if you do not fill it above 1/3 of its capacity and add 1 tablespoon of butter or oil
