Soak the beans in water overnight
Noon the next day, cook the beans in salted water with seasonings for 1 hour and a half
Drain and rinse
Cut 50 g of bacon into small cubes and fry in butter
Dice 1 onion and add it to the bacon
Fry until crispy
Add wheat flour and tomato paste, stirring well
Gradually add beef broth, stirring constantly, and let it simmer
Taste and adjust seasoning as needed
Place the beans in the sauce and warm up
Cut the remaining bacon into strips and the onion into rings, and place them on top of the beans
Serve with sausages and potatoes
You can also add chopped onions, bell peppers, sausage, thyme leaves or even meat to give it a special flavor
For white beans, it's a good idea to add smoked meat
