400g of white beans

Let the beans soak for one day and then cook them in the same water until they're tender but not mushy
Caramelize the garlic cloves and sage leaves in olive oil, then add the cooked bean mixture and let it simmer for a few minutes
Add the diced tomatoes, salt, and black pepper to taste, and cook covered for about 20 minutes or until the sauce has thickened
If necessary, add a little hot water
Place the linguica in a skillet with enough water to cover them and cook them covered until the water has evaporated
Remove the lid and let the linguica brown in their own fat
Mix the cooked beans and linguica together and let it simmer slowly for another 10 minutes
Serves 6-8 portions.
