4 fish fillets
1 tablespoon butter or margarine
1 medium onion, chopped
1 clove garlic, mashed
salt and pepper to taste
2 tomatoes, peeled and chopped
1/4 cup white wine or lemon juice
1 tablespoon chopped fresh parsley
1/4 teaspoon dried oregano

Melt 1 tablespoon of butter or margarine in a saucepan
Add the onion and garlic
Place the fish fillets on top, season with salt and pepper to taste, and cover with the tomatoes, white wine (or lemon juice), parsley, and oregano
Bring to a simmer
Reduce heat, cover the saucepan, and cook for 10-15 minutes
Serve in 2 portions.
