4 tender mignon steaks, each about 150g

3 tomatoes
2 tablespoons of chopped fresh parsley
2 tablespoons of chopped fresh chives
to taste salt

Heat the olive oil in a skillet
Fry the steaks on each side for about 3-4 minutes
Keep the steaks warm
Fry the finely chopped onion and mashed garlic in the remaining olive oil
Add the tomatoes, sans seeds, parsley, and chives
Fry for a few minutes
Season to taste
Add the cognac
Serve over the steaks
Serves 4 portions.
