In a skillet, heat the olive oil over medium heat, add the onion and garlic, and reduce the heat
Cook for 3 minutes
Transfer to a large bowl
Add 1 cup of warm water, milk, salt, and yeast
Mix well with a wooden spoon and set aside
In another bowl, dissolve the yeast in the remaining water and a pinch of sugar
Add the onion mixture and flour (1/2 cup at a time) until the dough is consistent enough to knead
Transfer the dough to a floured surface and knead, adding more flour as needed, until smooth and elastic
Add the smoked bacon and mozzarella cheese
Form a ball with the dough and test its elasticity by pressing it with your fingers: it should sink and then return to normal
If not yet at the right stage, knead some more
Place the dough in a well-greased 32.5 x 42.5 cm baking dish
Cover with plastic wrap and a towel
Let rise for 2 hours or until doubled in volume
Punch down the dough and let it rise again for another hour, always covered
Preheat the oven to 200°C (hot)
With floured hands, spread the dough over a smooth surface, forming a rectangle of the same size as the baking dish
Transfer the dough to the baking dish, brush with egg white and dust with sesame seeds
Let rise for another 15 minutes
Brush with olive oil
Bake for 30 minutes or until the edges are crispy and golden
