8 slices of bread without crust
2 egg yolks
1/3 cup of finely chopped green pepper
1 cup of grated cheddar or provolone cheese
1/4 cup of grated Parmesan cheese

Toast the bread lightly
In a bowl, mix the yolks, green pepper, and cheeses
Season with pepper sauce
Mix well
Beat the whites until fluffy with a pinch of salt, until stiff peaks form
Preheat the oven to 400°F (hot)
Cover the toasted bread with the yolk mixture and cover entirely with the beaten whites
Place in a baking dish and bake for about 12 minutes or until the top browns
Serve immediately
