1 kg of filet mignon

2 slices of bacon
60 g of butter
1/2 cup of dry white wine
salt and pepper to taste

Cut the filet into 3 1/2 cm thick steaks approximately
Heat a frying pan and lightly brown the bacon
Add the onion; cook for 2 minutes
Remove the bacon and onion
Cook the steaks over high heat for about 5 minutes per side, then reduce the heat and continue cooking for another 5 minutes; season with salt and pepper
Melt the butter in a separate pan; pour it over the steaks; add the sherry and cook slowly for an additional 2 minutes
Serve hot, serving 4 people.
