12 oz of the central part of a tender mignon, trimmed

Season the meat with salt and black pepper
In a medium-sized skillet that's been preheated and non-stick, melt 2 tablespoons of butter and add 2 tablespoons of olive oil over high heat
Cook the meat until it's nicely browned (about 20 minutes)
Meanwhile, in another skillet, heat the remaining olive oil over medium heat and sauté the garlic slices with a spatula, until lightly golden (about 1 minute)
Drain on paper towels
Cut the meat into portions and place it in a serving dish
Distribute the fried garlic on top and serve immediately
