1.2 kg of clean lizard
2 figs, peeled and cut into pieces
1/2 cup (cup) of dried apricots
1 chopped onion
1/2 cup (cup) of olive oil
1 cup (cup) of white wine
1 cup (cup) of hot water
1 tablespoon (tablespoon) of wheat flour
Salt and black pepper to taste

Pierce the center of the meat and remove a 'core'
Season with salt and pepper
Mix in the figs with apricots and half the onion
Stuff the meat and close the opening with a toothpick
In a pressure cooker, heat the olive oil and brown the meat
Add the remaining onion and cook for 2 minutes
Add the white wine and complete with hot water
Cover the pot and cook for 30 minutes or until the meat is tender
If necessary, add more hot water
Open the pot, remove the meat and keep it warm
Sprinkle wheat flour into the cooking broth and stir until thickened
Serve the sliced meat with the hot sauce.
