1 ripe papaya
2 cups cooked chicken
1/2 cup chopped fresh cilantro
1 tablespoon finely chopped green onion
1 teaspoon curry powder
2 tablespoons plain low-fat yogurt
2 tablespoons light mayonnaise
Salt to taste

Preheat oven to 350°F
Cut the papaya in half and carefully scoop out the pulp with a spoon
Leave the shell intact and reserve
Chop the pulp into small pieces and add to the chicken
Add the remaining ingredients and mix slowly
Place half of this mixture into each papaya shell and cover with aluminum foil
Bake for 15 minutes
Serve immediately.
