Separate the egg yolks carefully from the whites
Be careful not to break the yolks
Add 3 whites and mix well with a wooden spoon (don't beat)
Pass through a sieve to remove the membrane
Make a syrup with sugar, water, and vanilla
Let it simmer over high heat and, using a three-pronged funnel, guide the threads around the edge of the pan
This needs to be done slowly, so they remain the same size
Remove the threads with a skimmer and dip them in cold water, adding a little of the syrup
Remove the threads and place them on a sieve or strainer to drain well
Repeat this operation until all the yolks have been used
If the syrup becomes too thick, add a little hot water
If the threads stick together, dip two forks in cold water and separate the threads
To assemble the egg nest, use a cone of paper or isopor and place the threads
Secure with silver skewers with a maraschino cherry.
