Melt the butter with the olive oil
Add the onion and sauté over low heat until it starts to brown
Remove the onion with a slotted spoon and reserve
Mix the eggs with the milk
Season with salt and add the onion
Distribute into 50 mini molds, greased with butter, each measuring 7 cm in diameter and 2.5 cm high
Bake in a preheated oven at 200°C in a water bath until the flan is clean when tested with the tip of a knife
