1 tablespoon of unflavored gelatin
1/2 cup of cold water
1/2 teaspoon of salt
1 1/2 cups of cucumber, peeled and grated
800 grams of ricotta cheese, strained
2 tablespoons of finely chopped onion
1/2 cup of mayonnaise
1/2 cup of well-chopped salted cucumber
1 tablespoon of unflavored gelatin
1/2 cup of cold water
1/2 teaspoon of salt
1 1/2 cups of cucumber, peeled and grated
800 grams of ricotta cheese, strained

Soak the gelatin in cold water
Add the salt
Heat and stir over low heat until the gelatin dissolves
Cut the cucumber in half, remove the seeds, peel, and grate
Scoop off any excess liquid before measuring
Combine the gelatin with the ricotta cheese and mix well
Add the cucumber and remaining ingredients
Pour into a ring mold of 6 1/2 cups capacity
Chill in the refrigerator until firm
Unmold, and serve.
