Cook the potatoes
Peel and mash them
Mix quickly with the remaining ingredients to obtain a smooth dough
Make a roll with the dough and cut into about 20 pieces
Clean the plums well and remove the pits
If desired, place a little apricot in place of the pit
Wrap each plum in a piece of dough
Let it cook slowly for about 5 minutes in boiling water seasoned with salt
Remove with a skimmer and quickly coat in toasted breadcrumbs mixed with melted butter
