Combine the orange zest, almonds, sugar, and flour
Add the heavy cream and mix well
Place (1 tablespoon) spoonfuls of the mixture onto a greased baking sheet, leaving 2cm between each one
Smooth out the tops with the back of a spoon
Bake in a preheated oven at 200°C for 10 minutes or until the edges are golden brown
Let cool slightly and remove from the baking sheet carefully
Place on a plate to cool completely
Melt the dark chocolate in a double boiler and drizzle only over the Florentines
Let set for a few minutes before serving, then use a fork to create a design
