In a large bowl with plenty of water, let the peels soak overnight
Change the water several times

In a saucepan, bring the peels to a boil and cook for an hour or until they become soft and pliable
Drain the peels

Leave the peels in the saucepan and add sugar and orange juice
Bring to a boil again, stirring occasionally, until it reaches the caramel stage (the thread should be slightly resistant with a drop at the tip)
Remove from heat, let cool, and transfer to a compote dish.
