Place the Gruyère cheese in the blender
Tamp and blend
Remove from the blender
Heat the white wine, but do not let it boil
Add half of the Swiss cheese to the blender with flour, nutmeg, black pepper, and garlic
Tamp and blend
Add the warm white wine and remaining Swiss cheese
Blend until smooth
Place this mixture in a saucepan and combine with the blended Gruyère cheese
Cook over low heat, stirring constantly, until thickened
Now remove from the stove and place on a burner over one flame
