1 tablespoon lemon juice
1 cup tomato puree
1/2 cup grated Parmesan cheese

Remove the skin and bones from the chicken breasts and cut each breast in half
Season with salt and pepper
Blanch the spinach leaves
Drain and mix with lemon juice
Arrange the spinach in a baking dish, place the chicken pieces on top
Sprinkle with grated Parmesan cheese
Add tomato puree
Bake until the chicken is tender, about 6 portions.
