1 cup of well-drained and chopped pickles
4 tablespoons of room-temperature butter
4 tablespoons of mustard
4 tablespoons of mayonnaise
8 slices of whole wheat or integral bread
8 slices of Minas cheese
2 medium firm tomatoes
2 grilled chicken breast fillets

Spread two tablespoons of butter on one side of the bread slices
Place them side by side, with the buttered side facing down
Drizzle half a tablespoon of mayonnaise and half a tablespoon of mustard over each bread slice
Cut the tomatoes into six thin slices
On top of the bread, place a slice of cheese, three tomato slices, one-quarter of the pickles, and one chicken breast fillet
Spread the remaining butter
Top with mozzarella cheese
Heat a large non-stick skillet and add two sandwiches at a time
Press them gently and cook for 1 minute on each side.
