All-purpose flour

1 medium chicken cut into pieces (1.5 kg)
6 tablespoons of olive oil
8 small white onions
3 fresh tomatoes, deseeded
250g of fresh or canned mushrooms
1 can of green peas (450g)
2 green peppers, cut
A few drops of hot pepper sauce
1 cup of red wine

Preheat the oven to moderate heat (180°C)
Mix the flour with salt and pepper in a plastic bag
Add the chicken pieces, adding a few at a time, and shake well to coat evenly
Heat the olive oil and fry the chicken until it browns on all sides
Place it in a ceramic dish
Add the remaining ingredients, cutting the tomatoes into chunks
Pour the wine over the top and bake for 40 minutes or until the chicken is tender.
