1 new chicken breast

1 cup of Madeira wine
2 tablespoons of heavy cream

2 tablespoons of heavy cream
Cut the chicken into bite-sized pieces
Saute the onion in butter until golden brown, then add the chicken and cook until well-browned
Season with salt, black pepper, and salsa
Just before serving, remove the chicken from the pan, then add the mushrooms and Madeira wine to the pan
Bring to a simmer, whisk in the heavy cream, and let cook for 1 minute
Serve the chicken in the creamy mushroom sauce over rice
