Preheat oven to moderate temperature (180°F)
In a small bowl, mix together flour, salt, and black pepper
Coat the chicken pieces evenly with this mixture
Heat butter and olive oil in a large skillet over medium heat
Fry the chicken until golden brown
Remove from skillet and place on a baking sheet
Bake in moderate oven (180°F) for 20 minutes
Meanwhile, remove excess grease from skillet
Combine wine and tangerine juice
Bring to a boil and cook until reduced by half
Add heavy cream and continue cooking with constant stirring
Place chicken pieces on a serving dish and pour sauce over them
Garnish with tangerine segments
Serve 6 portions.
