4 bunches of broccoli (only the florets)
1/4 cup olive oil
1 tablespoon thyme
1/2 teaspoon salt
6 slices of crispy bacon, chopped
3 cloves of garlic, minced
1 2kg chicken
1 pinch of red pepper flakes
For garnish
2 pimento wheels, thyme and red pepper flakes to taste

Season the chicken with salt, garlic, thyme, and red pepper flakes
Also season half of the broccoli with salt and mix it with the bacon
Stuff the chicken with this mixture
Tie the drumsticks with twine to keep the stuffing from escaping
In a large pressure cooker, heat the olive oil and add the chicken
Cover and cook over low heat for 20 minutes or until it starts to brown
Remove from heat and let the pressure release
Transfer to a serving dish and remove the twine
Add the remaining broccoli to the pressure cooker with the juices, cover and cook for five minutes
Remove from heat and let the pressure release
Transfer the broccoli to the serving dish with the chicken and a little of the cooking juice
Garnish the bird with thyme, red pepper flakes, and around it, arrange the pimento wheels
Drizzle with remaining juices.
