1 1/2 kg of chicken pieces
3 tablespoons of olive oil
5 cloves of garlic, minced
3 medium-sized onions, chopped (270g)
3 cups of tomatoes, cut into small pieces
1 cup of green olives, pitted (200g)
1 tablespoon of oregano
1 cup of dry red wine
salt to taste

Dredge the chicken pieces in olive oil, gradually
Remove the chicken pieces from the pan
Remove a good amount of fat
Fry the onion and garlic in the remaining fat until they caramelize
Add the tomatoes, olives, and fry until the tomatoes are tender
Add salt, pepper, oregano, wine, and chicken
Cover and cook slowly for about 40 minutes until the chicken is cooked, then serve
