Season the chicken with salt and pepper
In a large skillet, melt the butter and oil
Add the chicken pieces and onion, and cook slowly, turning the chicken frequently, for about 20 minutes
Pour in the brandy over the chicken
Cover and cook slowly until the meat is tender, for approximately 30 minutes
Add the heavy cream and simmer, serving hot, cut into 4 portions.
