Beat the whites until they're stiff
Beat the yolks with salt, pepper, and flour until they're light and fluffy
Add the yolk mixture to the whites slowly, mixing well but carefully
Melt the butter in a 10-inch skillet
Swirl the skillet from side to side to spread the butter evenly
Pour in the eggs
Smooth out the top carefully and cover
Cook over low heat until the surface is dry and an inserted knife comes out clean
Lift one edge with a spatula and fold over the other
Let it slide onto a plate and serve immediately
