For the tomato sauce
1/4 cup of olive oil
1 medium onion, finely chopped
2 cloves of garlic, minced
1/2 kg of ripe tomatoes, finely chopped
Salt and black pepper to taste
For the beef cutlets
6 tender beef strips (500g)
2 cloves of garlic
1/2 cup of all-purpose flour
2 eggs, beaten lightly
1 cup of breadcrumbs
6 slices of mozzarella cheese

Prepare the tomato sauce: In a pan with olive oil, cook the onion and garlic until softened
Add the tomatoes and simmer for 15 minutes over low heat, covered
Remove from heat and strain through a sieve
Season and reserve
Make the beef cutlets: Season the strips with salt and garlic, then coat in flour, eggs, and breadcrumbs
Fry them in hot oil until golden brown on both sides
Place the cutlets on paper towels to drain
In a baking dish, place the cutlets, cover with mozzarella slices, and top with the tomato sauce
Bake in a preheated oven at 200°C, or until the cheese is melted
Serve immediately
