4 tablespoons honey
12 marinated olives
12 Japanese oranges in syrup
2 tablespoons olive oil

Cut the chicken in half and pound it thin
Sprinkle with salt and black pepper
Mix together orange juice, lemon juice, honey, and olive oil
Brush over the chicken
Add olives and oranges under the chicken
Start roasting with skin side down
Baste the chicken several times with the glaze
When almost tender, flip it over and roast until golden brown, basting frequently
Serve hot, garnished with orange slices
