2 tablespoons of cornstarch
1 cup of chopped fresh cilantro
2 tomatoes, cut into wedges
1 green pepper, cut into thin strips
cooked rice, served hot

Coat the chicken on all sides with oil
Combine the pineapple chunks and soy sauce
Cover the pan
Simmer for 25 minutes
Add the water mixed with cornstarch, stirring until thickened
Add the cilantro, tomatoes, and green pepper
Cover and simmer for an additional 10 minutes
Serve with cooked rice, hot
