In a medium skillet, place the sausages, cover with water, bring to a boil and let simmer (about 5 minutes)
Drain and chop
In a medium bowl, mix well the sausage, parsley, onion, and ketchup with a wooden spoon. Reserve
In another medium bowl, beat the eggs lightly with a hand mixer
Add milk and salt, mix well, and reserve
Grease a non-stick skillet with butter over medium heat
Add half of the reserved egg mixture and cook until set
Use a spatula to push the omelette edges towards the center, allowing any remaining liquid egg to flow underneath
When the omelette is slightly creamy, add half of the reserved sausage mixture
Fold 1/3 of the omelette over the filling and then fold again
Serve immediately
