'1 1/2 kg chicken cut into pieces'
'1 tablespoon olive oil'
'1 cup white wine'
'1 cup small cooked onions'
'1 cup sliced mushrooms'
'1/2 cup diced carrots'
'2-3 sprigs of fresh parsley, chopped into 2 or 3 pieces'
'2 tablespoons chopped fresh cilantro'
'1/4 teaspoon dried thyme'
'1 crushed garlic clove'
'1 bay leaf'
'1 1/2 kg chicken cut into pieces'

Cut the chicken into pieces, but do not use the wings
Remove the skin
Brown the chicken pieces in a hot skillet with olive oil
DRAIN THE OIL and season to taste
Combine the wine, onions, mushrooms, carrots, parsley, cilantro, thyme, garlic, and bay leaf
Let it simmer, covered, for 45 minutes
Remove the parsley and bay leaf
Remove the chicken and vegetables from the skillet and keep warm in a serving dish
BRAISE THE SAUCE for an additional 5 minutes or until reduced to 1/2 cup of liquid
Pour over the chicken and serve
