Remove the top layer of each ham hock and discard the bone
Butter the interior with melted butter and sprinkle with black pepper
Bake in a preheated oven at 200°C until golden brown
Reserve: Mix ricotta cheese with heavy cream to form a paste
Season with salt, English sauce, and red pepper sauce
Arrange on a platter, stuff each ham hock with a slice of raw ham, forming a flower shape
Place 1/2 spoonful of the ricotta mixture in the center of each ham hock
Serve at room temperature
