1 kg cooked and mashed sweet potatoes

Combine the yeast with the milk or water
Whisk together the flour, salt, and half of the sugar
Add to the yeast mixture and mix well
Cover and let it rest in a protected place until the dough is spongy and porous (preferably overnight)
Add the sweet potatoes, remaining sugar, and enough flour to achieve a soft dough
Shape into small loaves and place on a greased baking sheet
Let it rest until it has doubled in volume
Bake in a moderate oven (170°C) for about an hour
You should end up with around 60 loaves.
