Melt the butter or margarine
Add the flour and mix well
Gradually add the hot milk, stirring constantly
Cook until it thickens slightly
Beat the egg whites until stiff and pale
Add to the white sauce
Season with salt and pepper to taste, and add chopped parsley
Fold in the beaten egg whites gently
Add the grated cheese and mix slowly
Pour into individual buttered molds and bake in a water bath at 180°C for about 50 minutes or until firm
Unmold and serve with tomato sauce if desired
